Mathieu Cosme has taken over the family estate of Beaumont, where he cultivates his vines in the same way as his ancestors. The vineyard is managed in organic agriculture, the grape harvest is done manually and the labor of the chenin vines is done with horses. He brings through each of his wines the expression of the particularities of his terroirs and the age of his vines. Chenin is worked in all its forms, in bubble, still, sweet, and even dry-tender, raised in troglodyte cellars.
