Béatrice et Hervé Souhaut
Domaine Romaneaux-Destezet
Ardèche, Auvergne-Rhône-Alpes
Domaine Romaneaux-Destezet was created in 1993 by Hervé Souhaut and his wife Beatrice. The estate has developed over the years by planting new vines and successively buying up various plots of land, most of which are old vines (50 to 100 years old).
The grape varieties used are from local origin and representative of the Northern Rhône Valley: Viognier and Roussanne for the white wines, Syrah and Gamay for the red wines.
Hervé decided from the beginning of his activity to make wines as natural as possible in order to express the best potential of the terroir. He refuses all certifications, but the culture of the vineyard is obviously turned towards agroecology, because Hervé Souhaut chose to be independent in his way of thinking and to have above all free hands. The grapes are harvested by hand, the vinification is done without intervention (or almost) and the maceration is done at low temperature; no yeast or other inputs are used. Hervé Souhaut has been one of the great names in natural wine for decades, thanks to his infinite attention to detail in every decision he makes and also thanks to his knowledge of the terroirs and his vines that he has been refining for many years.
