Originally from Normandy, Sébastien Chatillon is a former talented sommelier at the Chateaubriand restaurant in Paris. Following his first experience in viticulture with René Mosse, the famous winemaker of the Loire valleys, he felt the desire to leave the Parisian asphalt. It was in 2016 that he had the idea to produce wine, following a few drinks with a friend in his father’s cellar. He moved to the Gard and founded Ad Vinum in a small cellar located in the town of Saint-Quentin La Poterie. He recovered a few hectares of Grenache and Syrah on Lauzes and Clay soils, which he converted to organic farming. No synthetic products, manual work and working the soil on horseback lead the philosophy of the domain. He continues to buy grapes from all over the country, Alsace, Beaujolais, Burgundy, Gard… to experiment with a wide range of vinifications based on maceration and other infusions of all kinds.

Thanks to his masterful palate and his creativity, he proposes new vintages every year, unfiltered wines without any addition. Sébastien Chatillon makes gourmet, floral and fruity juices, which can be structured, deep and a little punk when needed!
