Domaine Fanny Sabre
In 2005, at the age of only 25, Fanny Sabre took over the family estate created in the 80s. The domain is located in Pommard, in Burgundy, and covers 4.5 hectares of organic agriculture.
Fanny practices a meticulous work of the vineyard in order to preserve the identity of the soils and the terroirs. The harvest is done by hand, which guarantees a high quality vintage. The wines of the domain are made from a blend of aligotés, chardonnay and pinot noir.
In her cellar, Fanny practices semi-carbonic maceration and fermentation directly in barrels for the reds, in which the lees are blown in order to put them back in suspension. A unique stirring of the lees and no racking will bring freshness, straightness and finesse to her numerous vintages. The bottling is done by hand to finalize the work in beauty. In the vineyard as well as in the cellar, she favors gentle and organic methods. An approach that is the least interventionist possible for a fine and delicate result.
